There are moments in Ojai when the whole valley seems to bloom at once.

That feeling is at the heart of our Pixie White Ale.

In our new video, “Capturing Ojai Spring in a Glass | The Story Behind Pixie White Ale,” Jeremy shares the inspiration behind one of our favorite seasonal beers and asks a question that became the center of the recipe:

What does a citrus blossom taste like?

It is a simple question, but not an easy one. Citrus blossoms are vivid on the nose: fragrant, fresh, lightly sweet, almost honeyed, with a green brightness underneath. But translating that aroma into beer takes more than adding fruit. A blossom is not the same as juice. It is delicate. It is aromatic. It is here and gone, like a spring breeze passing through a grove.

For Pixie White Ale, the goal was to capture that fleeting impression of an Ojai citrus grove in bloom, while still making a beer that tastes fresh, balanced, and deeply drinkable.

The foundation begins with Ojai Pixie tangerines, a fruit closely tied to this valley and its springtime rhythm. Pixies bring a distinct tangerine character: bright, expressive, and unmistakably local. But Pixie White Ale is not simply a fruit beer. It is built in layers, with each ingredient helping shape the aromatic picture.

We use Pixie tangerine zest for its lifted citrus oils, the part of the fruit that carries so much of its perfume. We add house-made Pixie marmalade, bringing a deeper citrus note with a soft, rounded character. Alongside that, chamomileoffers a gentle floral quality, helping nudge the beer toward the impression of blossoms rather than just fresh fruit.

Then comes one of the more unusual elements: a unique variety of coriander from India. In many wheat beers and white ales, coriander can bring citrusy spice and a subtle herbal brightness. Here, it becomes part of the aromatic bridge, helping connect the beer’s floral nose with the tangerine character on the palate.

Together, these ingredients do something more interesting than announce themselves one by one. They create an impression.

On the nose, Pixie White Ale is meant to suggest the experience that inspired it: standing near a blooming Ojai citrus grove, breathing in the soft floral aromatics of spring. On the palate, the beer moves into fresh Pixie tangerine character, giving craft beer drinkers something both place-specific and familiar: citrus, spice, wheat beer refreshment, and a sense of season.
